What is Vitamin B12 (Methylcobalamin)? Vitamin B12, also known as cobalamin, is the only vitamin that contains metals. Vitamin B12 is synthesized by microorganisms in nature and cannot be produced by higher plants and animals. Vitamin B12 is the only vitamin that needs help from intestinal secretions (endogenous factors) to be absorbed. Some people lack this endogenous factor due to gastrointestinal abnormalities and develop pernicious anemia, even if their dietary sources are adequate. Plant-based foods contain virtually no vitamin B12. It stays in the gut for a long time, taking about three hours to be absorbed (most water-soluble vitamins take only a few seconds). The main physiological function of vitamin B12 is to participate in the formation of bone marrow red blood cells, prevent pernicious anemia, and prevent brain nerve damage. Vitamin B12 is the newest member of the B vitamin family. Vitamin B12 is a polycyclic compound containing trivalent cobalt. The four reduced pyrrole rings are linked together to form the Corrin macroring (similar to porphyrin), which is the core of the vitamin B12 molecule. Therefore, compounds containing this ring are called corrinoids. Vitamin B12 is a reddish, needle-like crystal that is easily soluble in water and ethanol. It is most stable in weak acid conditions with a pH of 4.5 to 5.0. Decomposition in strong acid (pH<2) or alkaline solution, heat may have some degree of damage. But short time high temperature disinfection loss is small, easy to damage under strong light or ultraviolet radiation. Losses in normal cooking are about 30%. .. |
