What is Calcium Propionate? Calcium Propionate is an effective growth inhibitor of most molds and some bacteria. It is widely used in bread and other bakery products to prevent mold growth, rope formation, and to extend the shelf life. In addition, Calcium Propionate serves as an excellent Calcium supplement. It is easy to handle, dissolves well, and is easy to blend into flour.

Function of Calcium Propionate

Calcium Propionate can be added at the start of dough-making together with the other dry ingredients. In some cases, a small effect on the rising step can be observed, resulting in a small reduction

in volume of the finished loaf. This can be overcome by the addition of some extra yeast. Calcium Propionate can also be added at the end of dough-making. In all cases, it is advisable to carry out an initial baking test, in order to determine the precise organoleptic and physical effects of the use of Calcium Propionate.

Application of Calcium Propionate

Calcium propionate white crystalline grain or powder ,with little propionic acid smell ,stable to heat and light ,easily soluble in water
[1]  As a food additive, it is listed as E number 282 in the Codex Alimentarius. Calcium propionate is used as a preservative in a wide variety of products, including but not limited to bread, other baked goods, processed meat, whey, and other dairy products.Maximum use level(Japan standard):3.15g/kg
[2]  In agriculture, it is used, amongst other things, to prevent milk fever in cows and as a feed supplement
[3]  Propionates prevent microbes from producing the energy they need, like benzoates do. However, unlike benzoates, propionates do not require an acidic environment.
[4]  Calcium propionate is used in bakery products as a mold inhibitor, typically at 0.1-0.4% 
[5]  Calcium propionate can be used as a pesticide.
